Timilia or Tumminia flour is a variety
of stone ground durum wheat on the
verge of extinction, typical of central Sicily.
Timilia wheat flour contains many
oligoelements of wheat germ and bran, it also
has a high protein value with a low
gluten index. The bread made of Timilia flour
is very tasty with a good nutritional intake
and, by using natural yeast, it remains soft and fragrant for a few days.
Il Russello is one of the oldest varieties of
Sicilian durum wheat with the lowest gluten
content and a great bent to several bakery
activites. For this reason, especially in Sicily
cultivation of ancient grains is widely back,
considering the extraordinary aroma and
flavor of these products with high digestibility
and full of nutrients.
Indeed from a traditional stone grinding we obtain an irregular grain flour rich in bran where germ, the most noble and tasty part of the seed, remains untouched.
